Fried dace with salted black beans is a Cantonese delicacy of dace, a freshwater carp from the Pearl River that is preserved in oil with dau si, fermented, salted black soybeans.
It is extremely flavourful and savoury, and can be sort of described as 'fish jerky'. The bones are soft and edible, like sardines. You can eat it straight out of the can, over fresh hot rice (the quick and good option, just dump the whole can on top, oil and all), or as an ingredient in things like stir frys.
